Favorite fall salad recipe

I have a go to recipes for the fall. As a mother and business owner I find convenience to be my highest priority when it comes to go to recipes, this recipe takes some time to make, but you can allocate small portions in bell jars in advance and have quick and easy lunches for the week. I have had this recipe for years now and it has morphed and continues to change with our taste and interests, so feel free to substitute and explore.

Fall Roasted Veggie Salad

INGREDIENTS

For the Dressing:

1/3 cup olive oil

2 tbsp horseradish

2 tsp maple syrup

2 cloves garlic

2 tbsp apple cider vinegar

1 tbsp dijon mustard

salt & pepper to taste

For the Salad:

1 small butternut squash, skin removed and cut into thin slices

1 head cauliflower chopped into small florets

1 bunch dinosaur kale, chopped coarsely

1 pound brussels sprouts quartered

1 can chickpeas beans rinsed

1 cup goji berries or mulberries

INSTRUCTIONS

Preheat the oven to 425°. Line a large baking sheet with parchment paper.

Cook the veggies and chickpeas in shifts so that everything can get to the perfect crispiness. Arrange the vegetables in a single layer on the baking sheet, spray with oil and sprinkle a little salt to taste. If they don't all fit use two baking sheets.

Bake at 425° for 20-30 minutes or until all vegetables are tender and lightly browned.

Meanwhile, combine all ingredients for the dressing into a bowl and stir.

Transfer roasted vegetables to a large mixing bowl and toss with dressing. Add mulberries or goji berries at the end. You can serve it just like this, or divide it up into pint size bell jars and store in the refrigerator for fast lunches. Can be eaten cold or warmed up.
